Grown on calcareous limestone soils at 220-310m altitude, the grapes are hand-harvested, direct-pressed, and cold-decanted for 36 hours before undergoing spontaneous fermentation with native yeasts. Fermentation finishes in the bottle, where it rests for at least 24 months on lees, gaining complexity and depth. Each bottle is disgorged by hand and topped up with the same wine—zero dosage, zero filtering, and zero sulfites.
