Cuvée Chrysalide represents Achillée's commitment to biodynamic viticulture and minimal intervention winemaking in Alsace.
This unique blend showcases the diversity of Alsatian terroir through spontaneous fermentation and gentle aging. The wine reveals complex layers of fruit and spice, balanced by vibrant acidity and mineral undertones.
The name "Chrysalide" is derived from the larval stage's evolution into a butterfly, symbolizing the transition to organic agriculture. This wine is the first in a short series and is a blend of all the vineyards in the conversion process. All the plots come from the granitic slopes of Scherwiller and the Grand Cru Frankstein, except for the Riesling from the Schieferberg. Nose: Very slight reduction at first, but the wine quickly opens up to reveal notes of fresh exotic fruits, floral tones (white flowers, honeysuckle, ivy), ginger, and citrus (grapefruit and lime zest). Finally, there are hints of spices, particularly nutmeg and white pepper. Palate: Crisp attack, beautiful tension with substantial volume. Herbaceous notes and citrus from the nose are complemented by the presence of spices.
Food and wine pairing suggestions: Coconut milk ceviche, seared scallops, duck cottage pie with potatoes, turnips, and pear on a peppery base.
