Winemaking: 75-year-old vines, skin maceration for 15 to 18 days without stems in 300-liter amphoras. Then pressed and the must returns to the same amphora for a 7-month aging. Bottled unfined, unfiltered and zero SO2. Subsequent aging in the bottle for 24 months before release. Annual production is 2,000 bottles.
