Made from a blend of 70% Sumoll and 30% Moscatel de Alejandría, the grapes are hand-harvested and pressed together to begin fermentation with native yeasts in stainless steel tanks. Fermentation finishes in the bottle, where it ages for a minimum of 12 months on lees before being hand-disgorged. Crafted without any fining, filtering, or added sulfites, this wine is a true reflection of Manel Aviñó’s commitment to natural winemaking.
