Pneuma 2021

Pneuma is a high‑altitude white from the Sierra de la Contraviesa in Granada. The grapes—Jaén Blanco and Vigiriega—from 80‑ to 100‑year‑old vines growing on schist with quartzite at 1 400 m are harvested by hand and destemmed manually.

After foot‑crushing and gentle pressing, the juice ferments spontaneously and then ages for 15 months in clay dolia. Only a tiny amount of sulphur is used at bottling.

This mountain wine combines saline minerality with aromas of green apple, citrus and white flowers; it’s vibrant yet textural.

Serve it with grilled seafood, Manchego cheese or fresh summer salads.
